Toss a handful of pomegranate seeds over baby greens and garnish with candied walnuts and bleu cheese to taste.
Dressing (for 4 guests) :
Combine 1/2 cup balsamic vinegar plus 1/2 cup olive oil with 1/4 cup pomegranate juice and 1/2 tsp minced shallots. Season with salt and pepper. If you’re like me and have absolutely no juice in the fridge, put a tsp fig preserves into a cup and microwave with a bit of water. Cool the cup in ice water and mix with vinegar, oil, and shallots as above.
