Leeks with bacon and and tomato

I successfully saved a bunch of wilted, old leeks that I completely neglected after buying them in Flushing for $1 a bunch. The outside was soggy and gross but after pulling off the first couple layers, I could see that these were salvageable.

This meal takes 20 minutes from start to finish. Begin by rendering bacon bits. Add sliced leeks and continue the sauté with bacon fat. Splash with white wine, if desired. Add a chopped tomato and an egg to finish!
