For the last day of ‘Shared Stories’ (http://sharedstories.weebly.com/), I woke up late, didn’t get to make the apple cream pie I was planning to, and instead started dicing up some mangoes that my mom had in the kitchen. 3 mangos later, I was wondering what the heck to make with all this fruit and googled up with this: Mango Salsa.
It ended up more like a mango salad since I didn’t have any chips to go with it. Here is the recipe, adapted from the Food Network:
3 mangos, diced
1 small cucumber, diced
1 bunch of cilantro
1/2 a white or red onion
Juice of 1 lime
Combine all ingredients, and add a little salt and pepper to taste. Its delicious especially if mangoes are in season (which they are now).
