Answer: make a chicken stock.
I made the below chicken broth with roasted chicken bones that I simmered with carrots, onion and celery. The bones had a lot of meat still clinging to them so I let them simmer and loosen in the hot water, then used chopsticks to pick out the bones.
Last but not least? Throw in angel hair pasta, fresh veggies, scallions, and plenty of seasoned salt. This was my dinner for about 3-4 days straight, and I got no regrets!! It was so friggin good.
