And now for a couple things I did make (or helped to make):

Silken tofu, topped with lightly sauteed minced garlic, ginger, scallions, and enoki mushrooms, finished with soy sauce and olive oil. This dish probably took all of 5 minutes to make.

R. made this vegan sandwich out of toasted wheat bread, avocado, hummus, sweet potato, green apple slices, and red wine/shallot vinaigrette. This is one incredible sandwich.
