Experiments in kimchi making!

It was so easy, you’d laugh. I used a recipe I found online from David Lebowitz but if you’re into something more complex/complicated, you could also try this one that a friend recommended from maangchi.com (I think the difference is that the chili paste is handmade, and then pureed with vegetables).

1 of 2 napa cabbages, post-salt water soak

Soaked for about 12 hours? Some recipes say soak for 24.

This should be ready in 3 days, when the liquid at the bottom starts to bubble 8)
