Earlier this week, at the request of C., who’s been waiting patiently for a share of this since the last kimchi experiment in October 2012, I started batch II of the great kimchi experiment.
This time, I tried a recipe recommended from Maangchi.com, which involves making a rice flour-based chili purée instead of salt and chili powder alone. My expectations are raised! Ain’t no way around it! For all the prep work, I hope it turns out well… because I made two gallons of it.
